When Buddy and Lisa came by today, they brought along a HUGE box of crawfish and a container of jambalaya that was a good 1 foot by 2 foot container. Wow!
The crawfish were seasoned perfectly. Very tasty, but not so hot that you sweat while you eat. Perfect! |

They've both been working at a restaurant out on Highland Road for the last month or so. (I forget the name of the place, but I know they have "all you can eat" crawfish some nights over there. After seeing all this, we'll probably be checking that out!)
I knew that Buddy had been preparing huge quantities of crawfish -- I think he said 1500 lbs today. Besides the food for the restaurant customers, they do enormous catering jobs. They even provide food for workers during disasters. But I had no idea just HOW much crawfish and how many other things he's been cooking, or more to the point, just how great a cook he really is! That jambalaya is absolutely excellent!
Mark's sister Vickie came in from DC last night and she and Mark spent the day over in Lafayette at the hospital where their sister Judy is right now. So it was really great to have all that terrific Cajun food there for them when they came home tonight. (They both loved that jambalaya as much as I did, I might add. Ummmmm!)
